Hello, and good afternoon! It's afternoon where I am in the Pacific Northwest. I trust you all had a wonderful Thanksgiving. We did. It was a smaller group than we normally have. Just my husband, our two boys, our daughter, and son-in-law. Grandma decided to stay home; medication she's on messes with her and she wasn't feeling up to going out, so we took her flowers and a plate.
I was not one of those souls that rose at the break of dawn to brave the masses and go shopping. Used to be one of those people, but not anymore. Crowds stress me out. I'm definitely more of an introvert now. Did you get up and go?

Did you have any cooking fiascos this Thanksgiving? I sure did. I've been trying to eat healthier--I think I've shared that before. And I LOVE pecan pie. I've made it from scratch several times before, but never a healthy version. I found a recipe from a gal I trust to know her business. And she does, but apparently I didn't. LOL. The recipe called for almond flour for the crust, and I thought I'd had it, but turns out it was coconut flour. So I thought I'd use a flax/almond/coconut blend. It did not work. So the crust, instead of being nice and flaky, was dry and crumbly. Yuck. Then the filling did not turn out well. I may have over cooked it, because while it tasted okay, it just WASN'T the same.
I'm determined to get this right. So stay tuned for that attempt in the future. If it works out, I'll share it here along with the recipe.
As I'm at 72 of 50 books read for the year, I've decided to reread again one of my favorite series: The Throne of Glass. I love this series so much that I named my dog, Aelin, and my horse, Rowan. **This is not fully a closed-door series, FYI. It is for the most part, though there is innuendo, but the last couple of books get into open-door scenes.
